Slow Cooker Garlic and Brown Sugar Chicken

Last night's dinner was Slow Cooker Garlic and Brown Sugar Chicken.  I put it in the crock pot that morning, then Big Daddy made rice and a vegetable just before dinner time.  (I was down with the migraine.)  Everyone liked this!  In fact, a friend of Small T's finished off the 2 pieces that were going into the refrigerator as leftovers.

6 chicken thighs (mine were bone-in, and frozen)
1 c. packed brown sugar
2/3 c. vinegar
1/4 c. lemon-lime soda (I used diet mt. dew as that's what I had on hand)
2 to 3 Tbsp. minced garlic (I used 3 Tbsp.)
2 Tbsp. soy sauce (I used lite soy sauce)
1 tsp. fresh ground pepper
2 Tbsp. corn starch
2 Tbsp. water
Rice or noodles, cooked

Place chicken in slow cooker.
Mix together brown sugar, vinegar, soda, garlic, soy sauce, and pepper.  Pour over chicken.
Cook on low for 6 to 8 hours or on high for 4 hours.
Remove chicken from slow cooker.  Pour remaining sauce into a sauce pan.  Turn heat to high.
Mix corn starch and water, pour into sauce pan and mix well.  Let sauce come to a boil and boil for 2 to 3 minutes or until it starts to thicken and turns into a glaze.
Remove from heat and let sit for a minute or two.  It will thicken as it cools.

Serve chicken over rice or noodles.  Top with glaze.
