Pears

The pears are starting to fall off our tree. That means it's time to start preserving them. Our favorite way to use the pears is in Pear Honey. This is the recipe I use:

3 lbs fresh pears, peeled, cored, and finely chopped
5 1/2 cups sugar
1 (8 ounce) can crushed pineapple in juice
1 tablespoon lemon juice

In a 6 quart stainless steel kettle combine all ingredients.
Bring to boiling, stirring occasionally.
Simmer 40 minutes.
Spoon into sterile jars, leaving a 1/2 inch head space.
Wipe jar rims, adjust lids.
Process in boiling water for 10 minutes.
Makes 7 half pints.

We enjoy this recipe a lot and is the best method for us to use up all the pears. Of course, we always have extra to share and swap with our friends and neighbors.
